Easy Roast Chicken
- 6 chicken breasts of mixed chicken pieces
- 8 ounce bottle of Wishbone Russian or Western dressing
- 16 ounce can of whole berry cranberry sauce
- 1 package Lipton's Onion soup mix (use both packages
- Mix all above ingredients together until well blended
- Place chicken in greased 9 x 13 pan
- Pour dressing mixture over the chicken
- Bake in a 300° oven for 2 hours, covered the 1st hour and uncovered the 2nd hour
- Check carefully, may be done after 1 æ hours
Easy Corn Casserole
- 1 package corn bread mix (Betty Crocker of Jiffy)
- 1 15 oz. can whole kernel sweet corn, undrained
- 1 15 oz. can cream style corn
- 2 eggs
- 8 oz. sour cream
- 1 stick or 4 oz. softened butter or margarine
- Mix all ingredients together
- Pour into greased 9 x 13 pan or greased bundt pan
- Bake at 375° for 45 minutes, serves 6-8
Easy Overnight Pot Roast
- 3-4 pounds of beef chuck roast
- 1-2 onions, sliced
- 1 can 14 oz. beef broth (low sodium or regular)
- Add baby new potatoes, carrot chunks, mushrooms
- Season roast to taste and place in a heavy pan
- Cover roast with onion slices, add potatoes, carrots and mushrooms
- Pour beef broth into pan
- Cover and bake in 200° oven OVERNIGHT (8 or more hours)
- Remove meat from pan, chill remaining juices to remove fat
- Remove any visible fat from meat
- Add juices to meat and vegetables; warm before serving
- (Roast can be made one or two days before serving; it gets better as it stands!)
